The tarts:

1 14-ounce sheet puff pastry, defrosted if frozen

4 teaspoons butter

1 ounce chanterelle mushrooms, cleaned and cut into small dice

1 ounce Black Trumpet mushrooms, cleaned and cut into small dice

1 ounce King Trumpet mushrooms, cleaned and cut into small dice

-- Leaves from 1 large sprig thyme (about 2 teaspoons)

-- Kosher salt, to taste

-- Freshly ground black pepper, to taste

2 ounces finely crumbled blue cheese, preferably Point Reyes + more to garnish

1 egg

The fondue:

2 ounces crumbled blue cheese, preferably Point Reyes + more to garnish

1 cup cream

To plate:

1 bunch mache or arugula, washed, leaves separated

4 to 6 radishes, thinly sliced

4 teaspoons olive oil
