8 Chinese dried black mushrooms

1 lb. veal sweetbreads, cleaned

2 slices lemon

1/2 cup chicken stock

1/4 cup oyster sauce

3 tbsp. dry sherry or sake

1 tbsp. soy sauce

1 tsp. sugar

3 tbsp. extra-virgin olive oil

1 medium yellow onion, peeled and minced

1 clove garlic, peeled and minced

2 scallions, trimmed and finely chopped
