9 Ingredients

  • 2 15-oz cans white beans, rinsed and drained
  • 2 Tbsps extra-virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 12 slices multigrain bread
  • 1 small red onion, thinly sliced
  • 1 cucumber, preferably hothouse (seedless), thinly sliced (peeled, if desired)
  • 1 4- to 5-oz container sprouts (such as alfalfa, radish, broccoli, or a combination)
  • 2 avocados, pitted and thinly sliced

As strange as the combination of this sandwich sounded to me, it was sooooooooooooooooo good!!! I didn't have sprouts or cucumber. I added finely diced zucchini squash, half of a tomato, two dashes of tabasco instead. I had a slice of cheese, red lettuce and this spread on my bread and it was amazing!! Brought the rest to work!
