4 pound piece of beef brisket

1 teaspoon salt

1 teaspoon freshly ground black pepper

1 1/2 tablespoons sweet pimenton or paprika, or more to taste

4 tablespoons chicken fat or neutral oil

3 large or 4 medium yellow onions, cut in medium dice

1 cup beef broth or dry red wine, plus more beef broth if necessary

1 cup tomato puree or tomato sauce

6 to 8 large carrots, peeled and cut into 2-inch pieces

1 pound cremini or white mushrooms
