Ingredients for 8 servings

3 tbsp unsalted butter

1 large yellow onion

2 x Granny Smith apples, cored, peeled and sliced thinly

4 x carrots, peeled and sliced

2 large sweet potatoes, peeled and sliced

4 cup pureed canned pumpkin or 6 cups fresh pumpkin peeled, seeded and cubed

1 tbsp curry powder

1/2 tsp cinnamon

1/2 tsp ground ginger

1/8 tsp each ground cloves and ground allspice

1 cup dry white wine

6 cup chicken stock (or vegetable stock for vegetarians)

3/4 cup creamy peanut butter (optional)

Water for consistency

Salt and freshly ground pepper to taste
