Ingredients

3 pounds lean veal, lamb, beef or pork, cut into large bite-size pieces

1/2 cup extra virgin olive oil

1 onion, chopped

5 garlic cloves, thinly sliced

3 cups diced tomatoes (canned OK), including juices

4 tablespoons chopped parsley

1 tablespoon vinegar

1 to 2 teaspoons sugar or honey

Salt and pepper to taste

1 cinnamon stick

Water, beef broth or dry red wine, as needed

3 pounds fresh spinach, cleaned and trimmed, or 1 pound frozen spinach

1/2 cup chopped fresh dill
