250 g fresh mozzarella, drained and cut into 1cm slices

100 g peeled chestnuts

50 g unsalted butter

2 shallots

3 cloves of local garlic or 1 clove of foreign garlic

A tin of peeled plum tomatoes

1 bay leaf

3 sprigs of fresh thyme
