1/3 cup extra-virgin olive oil

4 garlic cloves, crushed

1/2 cup dry white wine

3 or 4 fresh thyme or nepitella sprigs

Salt and freshly ground pepper, to taste

1 lb. spinach tagliatelle, or a mixture of spinach and egg tagliatelle

2 Tbs. unsalted butter

Freshly grated Parmigiano-Reggiano cheese for serving
