Ingredients for 4 servings

2.0 tbsp dry sherry

extra-virgin olive oil , for drizzling

300.0g cleaned squid , cut into rings

300.0g chorizo , either mini whole ones or a large sausage, cut into bite-size pieces

3 small shallots , diced

handful flat-leaf parsley , roughly chopped

1 egg yolk

100.0ml white wine

300.0g chopped and squashed tomatoes (squeeze to a pulp using your fingers)

1 heaped tsp smoked Spanish paprika (we used the sweet, or dulce type)

25.0g butter

400.0g clams

300.0g pork mince

3 garlic cloves , 2 crushed and 1 sliced

50.0ml olive oil , for frying

50.0g fresh breadcrumbs
