Ingredients for 4 servings

1/4 cup grated Parmesan

2 tablespoons olive oil

1/2 cup chopped fresh basil

2 1/2 to 3 cups flour plus more if necessary

2 cups crushed tomatoes

1 cup cooked sausage pieces, such as chorizo or Italian sausage

1 package active dry yeast

1/2 pound mozzarella, cut into 1/2-inch cubes, plus 1/2 pound mozzarella, sliced

1 1/2 teaspoons salt

Basic pizza dough, prepared as described for calzones, recipe follows

1/2 pound ricotta

1 cup warm water (110 degrees F)

1 1/2 tablespoons extra-virgin olive oil

2/3 cup kalamata olives, pitted and coarsely chopped
