2 large shallots, minced

2 fresh red chiles, seeded and minced

3/4 teaspoon salt + salt to taste

1/2 cup minced cilantro

1/4 cup minced fresh mint

1 salmon (preferably Atlantic), 10 to 10 1/2 pounds, scaled, filleted, head, bones and trimmings reserved

Freshly ground pepper as needed

1 generous tablespoon olive oil
