Ingredients for 4 servings

SALAD

1/2 cup olive oil

1 cup yellow cornmeal

2 cups basic polenta

1 teaspoon salt

3 cups water

1/4 cup fresh lemon juice

BASIC POLENTA

3 small head romaine lettuce , halved lengthwise (or 2 large heads)

4 anchovy fillets , chopped

DRESSING

1 1/2 ounces shaved parmesan cheese

salt , to taste

vegetable oil (for deep frying)

1/2 cup drained sun-dried tomato packed in oil , cut into thin strips

3 garlic cloves

2 tablespoons unsalted butter or unsalted margarine

1 tablespoon Dijon mustard

1 teaspoon olive oil

1/2 cup pine nuts , toasted (we used walnuts)

POLENTA CROUTONS

fresh ground black pepper , to taste
