1 large head of cauliflower
1 lb of fingerling potatoes
1 jar of Masala Cooking Sauce
Handful of small tomatoes
cilantro or Scallions
Break down cauliflower into bite size florets.
Slice potatoes into thin rounds so it will cook in the same amount of time as the cauliflower.
Season with salt, pepper, chile flake, olive oil. toss to coat and turn onto a sheet tray.
Put in 400 degree oven for 25 minutes - shaking the pan half way.
While to vegetables are roasting, chop the scallions, cilantro, and slice the chile.
Add half a jar of cooking sauce to a deep pan on medium high heat, along with the tomatoes.
Cook for a couple minutes until warmed through.
Add the roasted vegetables, sauté for a minute then add the chopped herbs and chile and toss to combine.
Finish with a good squeeze of lemon and taste to adjust seasoning.
