Ingredients

1 1/2 pound lamb shoulder, cubed

salt and pepper

extra virgin olive oil

1 red onion, chopped

1 stalk celery, chopped

1 clove garlic, chopped

4 cardamom pods

5 coriander seeds

1 dried chile de arbol

1 tablespoon tomato paste

1/2 cup spicy tunisian olive brine

1/2 cup whole peeled tomatoes with juice, crushed by hand

2 cups chicken stock, or water

1 strip, lemon zest

1/2 cup dried apricots

1/2 cup spicy tunisian olives

1 box, cous cous

1/2 cup dried dates, finely chopped

1/2 bunch fresh mint, chopped

1/2 bunch fresh italian parsley, chopped

zest and juice of 1 lemon

a generous pour of extra virgin olive oil
