Julienned ginger

1 cinnamon stick

6 green cardamom pods

2 red onions, sliced

2 1/2 pounds bone-in, skinless chicken thighs

1 (3-inch) piece fresh ginger, peeled and sliced into coins

Kosher salt to taste

1 tablespoon plus 1 teaspoon muchi curry powder

2 dried chiles de arbol
