60.0g large blonde raisins , plus a few extra to garnish

salad leaves , dressed with walnut oil and wine vinegar

25.0g pistachios or hazelnuts, finely sliced, plus extra to garnish

2-3 tbsp brandy

100.0ml white wine

200.0g butter

2 medium eggs , beaten

1 garlic clove , finely sliced

TO SERVE

4 shallots , finely sliced

slices toasted walnut bread

50.0g melted clarified butter (see tip, below)

200.0g chicken livers, all traces of sinew removed
