Ingredients for 8 servings

1 1/2 cups whole-wheat pastry flour

1/2 cup oat flour

2 Tbsps palm sugar (or agave nectar)

1 Tbsp baking powder

1/2 tsp salt

1 2/3-2 cups unsweetened soy, almond, rice, or hemp milk

1 medium banana, mashed (1/2 cup)

6 Tbsps coconut oil, melted

1 flax egg (1 Tbsp flaxseed meal + 2.5 Tbsp water)

1 large egg (or substitute 1 more flax egg for vegan version)

1/2 cup chocolate chips (mini or regular)

Preparation

1.

Place dry ingredients in large mixing bowl and stir until mixed well. Add remaining ingredients and combine until well blended and smooth.

Let batter sit 5 minutes before using.

Preheat waffle iron.

4.

Use 1/2 cup batter per waffle and cook until done (approx. 2 minutes).

5.

Serve immediately.
