220 gr of spaghetti
Parmesan or Pecorino cheese
Extra Virgin Olive Oil
Salt & Pepper
Cut up the zucchini into cubes and cook it in a pan with a fried onion until it will be golden brown and crispy.
Bring a large pot of lightly salted water to a boil and, in the meantime, beat the eggs in a bowl, add some grated parmesan cheese and a bit of salt. When pasta is ready, mix together spaghetti and zucchini for a few minutes.
Turn off the stove and add the egg mixture over the pasta. A little of pepper, et voila!
