  • 1 stick unsalted butter, room temperature
  • ½ cup granulated sugar
  • 1 egg
  • 3 small bananas, mashed with a fork
  • 1 tsp baking soda dissolved in 1 Tbsp hot water
  • 1 ½ cups all-purpose flour
  • ¼ tsp kosher salt
  • ½ tsp nutmeg
  • ½ cup mini chocolate chips (optional) or walnuts (for adults)

My wife just made these this morning and I have already had four!! Best banana muffins I've ever had. PS She made them for our son... I just couldn't resist!

when they are individual its easy to customize them too like dried cherries or nuts in few...really fun and helpful in portion control also

Great recipe...I used whole wheat flour and added some ground flax. My 18 mo old son loves them and I'll definitely make them again!
