Ingredients for 4 servings

vegetable oil

2.0 tsp tamarind paste

4 brill steaks or fillets (about 175g each)

1 bunch coriander , roughly chopped, with a few leaves reserved for garnish

2 garlic cloves , finely diced

2 spring onions , shredded

5 cm piece ginger , finely diced

2 small red or yellow chillies , deseeded and finely sliced

2.0 tbsp soy sauce

400.0g greens, red chard and spring greens are good)
