For the Chocolate Panna Cotta:

1 tablespoon (1 envelope) unflavored powdered gelatin

2 cups whole milk

4 ounces 50% chocolate (semisweet), chopped

1/3 cup Dutch-processed cocoa powder

1/2 cup sugar

For the Coffee Panna Cotta:

1 1/3 cups whole milk

2 tablespoons instant coffee granules

1 vanilla bean, split and scraped, or 1 tablespoon pure vanilla extract

1/2 cup plus 1 tablespoon sugar


1/3 cup apricot preserves
