I made this for dinner the other night, except I roasted the pork instead of grilling it (which may add a few calories). It was very good, surprisingly flavorful - even my boyfriend, who is a typical meat-and-potatoes kind of guy and never that happy when I make "healthy" food, really liked it. We're big garlic fans, so even though the reviewers on the site found the raw garlic in the lemon dressing to be too potent, we really thought it added to the flavor. I would definitely make this again.

2 garlic cloves, divided

1 (1-pound) pork tenderloin

Cooking spray

1/2 teaspoon salt, divided

3/4 teaspoon black pepper, divided

1/2 teaspoon grated lemon rind

3 tablespoons fresh lemon juice

2 tablespoons olive oil

1/2 teaspoon dried thyme

5 cups chopped romaine lettuce
