Ingredients for 4 servings

3 cloves garlic, minced

1/2 cup chopped parsley

1 1/4 pounds boneless center-cut pork loin chops, trimmed of any excess fat or sinew and cut into 1/2-inch cubes

1 (15 ounce) can hominy, rinsed and drained

1/2 cup chopped cilantro

1/4 teaspoon salt

3 tablespoons masa harina or all-purpose flour

1 lime, cut into wedges

8 scallions (including at least half of the dark-green tops), cut into 1/2-inch pieces

4 cups reduced sodium chicken broth

*If you can't find poblanos, substitute 2 bell peppers and 1/2 fresh jalapeno.

2 poblano* peppers, cut into 1/2-inch squares

6 teaspoons olive oil

1 Hass avocado, diced
