4 stalks celery , diced

½ cup (125 ml) finely chopped fresh parsley

  Harissa

4 cups (1 L)  vegetable or chicken stock (store-bought or see recipes)

1 tbsp (15 ml) grated lemon zest

1 can (28 oz/796 ml) diced tomatoes , with juice

1 cup (250 ml) dried red lentils , rinsed

1 tbsp (15 ml) ground turmeric

1 can (14 to 19 oz/398 to 540 ml) chickpeas , drained and rinsed (see Notes)

2 cloves garlic , minced

1 tbsp (15 ml) olive oil

2 onions , coarsely chopped

½ tsp ( 2 ml) cracked black pepper corns
