The Chicken

2-inch piece of fresh ginger, peeled

1/4 cup soy sauce

1/4 cup Chinese rice wine or sherry

1 teaspoon red chile-garlic sauce (such as from Huy Fong foods)

1/4 teaspoon Asian sesame oil

Pinch sugar

4 boneless, skinless chicken half-breasts (6-7 ounces each)

The Asparagus

1 pound thin asparagus, trimmed

1 large shallot

2 tablespoons soy sauce

1/2 teaspoon Asian sesame oil

2 tablespoons vegetable oil

2 slices of fresh ginger, each about 1/4 inch thick

1/2 cup water

2 teaspoons cornstarch mixed with 3 tablespoons water

2 teaspoons sesame seeds
