2 tsp ground cinnamon

1 1/2 tsp ground crystallized ginger, or 1 teaspoon regular ground ginger

1 cup vegetable oil

2 cup sugar

1 cup pecans, chopped finely

1 cup shredded coconut

1 1/2 cup carrots, peeled and cut into ½ inch slices

8 oz. can crushed pineapple in natural juice, well drained

2 tsp vanilla

1 lb cream cheese, softened

6 tbsp unsalted butter, softened

3 cup confectioner’s sugar

1 tsp vanilla

1/2 cup cream of coconut

1/4 cup whole milk
