Ingredients for 4 servings

milk-fed veal sweetbreads

500 gm small onion, chopped

2 x bay leaves

1 x whole clove

salt

flour

curry powder

curry leaves

2 tbsp butter

1/4 cup For Curry Sauce, olive oil

1 x small onion, chopped

2 x leeks, white part only, washed and thinly sliced

1 x carrot, peeled and thinly sliced

1 x green apple, peeled, cored and thinly sliced

3 tbsp brandy

pepper

sugar (optional)

3-6 tsp curry powder, to taste

1/4 cup flour

2 cup chicken stock, heated

1/2 cup sweetbreads poaching liquid

1/2 cup heavy cream
