1 tbsp cinnamon powder

2 cloves garlic, chopped finely

1 tsp aniseed powder

1 tbsp lime juice

2 tbsp fish sauce

1 ½ tsp dried chili powder

2 sprigs curry leaves

2 oz onions, sliced thinly

2 oz shallots, pounded coarsely

1 tsp MSG

2 ripe tomatoes, peeled and sliced thickly

1 tsp salt

1 tsp sugar

4 fl oz. oil for frying fish

1 tsp rempah tumis

1 ½ tsp turmeric powder

24 oz Spanish mackerel

1 tbsp cumin powder

1 tbsp sugar

½ thumb-sized piece ginger, shredded thinly

1 tsp pepper

3 tbsp oil for frying paste
