8 Ingredients

  • 1 1/2 lb chicken (boneless & skinless, OR fish out the bones and skin after about 4 hours)
  • 1 1/2 cup prepared enchilada sauce
  • 2 x chopped celery stalks
  • 2 cans tomatoes with seasoning, 14.5 oz
  • 2 cans pinto beans, undrained, 14.5 oz
  • 1 x onion, diced
  • 1 - 2 tsp chili powder
  • 1 tsp cumin
