1/2 cup lentils
2 cloves garlic
1/2 cup parsley
4 chicken thighs skinless boneless chicken thighs
1/2 cup dill
1 tsp tumeric
1 tsp paprika
1/2 tsp pepper
1/4 tsp cumin
grapeseed oil or avacado oil
Heat a small pot over medium heat. Add oil and chopped up onion. Stir onion until translucent.
Add chicken, salt, pepper, cumin, paprika, turmeric and about 1-2 cups of water. Bring to boil and reduce heat. Cover and let cook for about 1/2 hr.
In a medium sized pan add water. Bring to a boil. Add dash of salt and pepper.
Rinse lentils and add to boiling water. Reduce heat and let summer for 5 mins.
Add chopped up potatoe. Let simmer for 5 mins.
Add chopped up carrot and parsnip. Let boil for a few mins.
Add parsley, dill and garlic. Let boil for 1 min. Turn off stove.
Add the chicken and broth into the soup. Stir and enjoy!
