1 small zucchini, diced

1 can (14.5 ounces) no-salt-added tomato sauce

2 teaspoons dried oregano

1/2 teaspoon dried basil

1/4 teaspoon dried thyme


Freshly ground black pepper

1/2 cup part-skim ricotta cheese

1/4 cup (1 ounce) part-skim mozzarella cheese, grated

2 tablespoons grated Parmesan cheese

2 tablespoons chopped flat-leaf parsley

1 large egg, lightly beaten
