Ingredients for 2 servings

Kosher salt

2 x scallions, white and light green parts separated and finely sliced

1 tsp red wine vinegar

2 x hard boiled eggs, peeled

1 tsp Dijon mustard

1/3-1/2 cup extra-virgin olive oil

10 x capers, rinsed and dried

1/8 tsp dried chili flakes

1 x handful of fresh, flat leaf parsley leaves, chopped

1 lb thick asparagus, peeled if needed, trimmed and cooked to your liking
