  • 2 center-cut salmon fillets, uniformly sized about 6" long, 4" wide and at least 1" thick
  • 0 salt, to taste
  • 0 white pepper, to taste
  • 0 lemon wedges for squeezing
  • 2 t unsalted butter
  • 4 white mushrooms
  • 1 medium shallot
  • 3 T dry vermouth
  • 0 for the salmon
  • 0 for the cream sauce
  • 1 c dry white wine
  • 1 c heavy cream
  • 2 T or more, clam juice
  • 2 1-inch chunks of scrap salmon
  • 4 oz sorrel leaves
