Ingredients for 8 servings

2 cups (500 mL) reduced-sodium chicken stock

½ tsp (2 mL) cracked black pepper corns 

1 can (14 oz/398 mL) no-salt-added diced tomatoes with juice

2 tbsp (25 mL) finely chopped cilantro

1 chipotle pepper in adobo sauce, optional

Fried tortilla strips, optional

Shredded lettuce , optional

4 slices bacon

2 dried ancho or guajillo chiles

Chopped radish , optional

2 lbs trimmed pork shoulder , cut into 1-inch (2.5 cm) cubes 1 kg

1 can (29 oz/824 mL) hominy , drained and rinsed

Chopped red or green onion , optional

4 cloves garlic , minced

Lime wedges

2 onions , finely chopped

1 tbsp (15 mL) dried oregano leaves 

Salt

2 tsp (10 mL) finely grated lime zest

2 cups (500 mL) boiling water

2 poblano or green bell peppers , seeded and diced (see Notes)

2 tbsp (25 mL) freshly squeezed lime juice
