2 shallots, thinly sliced

1/2 teaspoon dried thyme

1/2 pound fresh shiitake mushrooms, stemmed, caps thinly sliced

Salt and freshly ground pepper, to taste

1 roll (18 ounces) prepared polenta

1-2 tablespoons vegetable oil

3 ounces Teleme cheese, diced and at room temperature

A few tablespoons chopped fresh Italian parsley, for garnish

Dried chile flakes, for garnish (optional)
