3 egg yolks

1 tablespoon olive oil + oil for frying chicken

Juice of 3 lemons, added a little at a time

1 tablespoon flour

6 tablespoons butter

Pinch saffron threads

1/2 to 2/3 cup water

Salt and a pinch of black and cayenne pepper

Tiny pinch freshly grated nutmeg

6 small to medium boneless, skinless chicken breasts

Flour for dredging lightly

6 thin slices prosciutto

1 to 1 1/2 pounds asparagus, tough ends snapped off
