Ingredients for 4 servings

2-3 tbsp olive oil

2 aubergines

400 g can chickpeas

1 lemon , juice only

1 red onion , finely chopped

1.0 tsp each paprika and ground cumin

1.0 tsp clear honey

FOR THE DRESSING

good bunch fresh coriander , roughly chopped

4.0 tbsp olive oil
