Panzanella (Italian Bread Salad)

1/2 cup extra-virgin olive oil

2 cloves garlic , peeled

1 loaf store-bought or homemade rustic country bread torn into 1- to 1 1/2-inch chunks

2 tablespoons good-quality red wine vinegar

1 tablespoon minced shallot

Pinch sugar

Salt and freshly ground pepper

2 large tomatoes , cut into 1/2-inch chunks

1 small red onion , thinly sliced

1/2 unpeeled hothouse cucumber , cut in half lengthwise, then into 1/2-inch pieces

1/2 cup basil leaves , cut into ribbons, plus additional for garnish
