  • 225.0g floury potatoes , peeled and diced
  • 25.0g butter
  • 100.0g frozen or canned sweetcorn kernels
  • 125.0ml dry sherry
  • TO SERVE
  • 1 garlic clove , crushed
  • pinch of paprika
  • 1 red pepper , seeded and roughly chopped
