  • 12 spears of asparagus, trimmed of their tough ends
  • Olive oil as needed
  • 2 Tbsps freshly grated Parmesan or similar cheese (Asiago, Locatelli Romano, etc)
  • 6 slices prosciutto or jamon serrano
  • 4 large eggs
  • Torn fresh basil leaves for garnish (optional)
