1 3/4 C canned whole tomatoes

1 tbsp olive oil

4 boneless, skinless chicken breasts (1 1/2 lb total)

1/2 tsp salt

1/4 tsp black pepper

1 red bell pepper, chopped

1/2 C chopped onion

2 sm cloves garlic, minced

1 C brown rice

1 3/4 C chicken stock (we used Kitchen Basics)

1/4 tsp ground turmeric or paprika

1 bay leaf

1 C frozen baby peas, thawed

1/2 C chopped fresh basil
