1 pound whole-wheat bread

1/2 to 3/4 cup pearl barley

1/2 pound sweet Italian sausage

2 tablespoons unsalted butter

2 cups finely chopped onion

1 1/2 cups finely chopped celery

1 large tart apple

6 cups low-salt chicken broth, or homemade chicken stock

1 cup coarsely chopped pecans

1 tablespoon finely chopped fresh sage, or 1 teaspoon crumbled, dried sage

1 tablespoon finely chopped fresh thyme, or 1 teaspoon dried thyme

1/2 pound chestnuts, roasted, peeled and coarsely chopped (optional)

Freshly ground pepper and salt to taste
