handful mixed baby salad leaves, picked and washed

2 tbsp grated Parmesan

4 large eggs , separated, plus 1 large egg white (use the yolk, see below)

50.0ml double cream

2 tbsp chopped thyme leaves

1 tbsp Dijon mustard

handful rocket , washed

3 tbsp extra-virgin olive oil

1 red apple , cut into fine matchsticks

100.0g plain flour

FOR THE PARMESAN GLAZE

100.0g unsalted butter

25.0g grated Parmesan

175.0g rindless goat's cheese , crumbled

50 g walnut pieces, chopped

1 large egg yolk

1 tbsp red wine vinegar
