4 boneless skinless chicken breasts , each breast cut into 2 strips each (about 1.6 pounds)

1 (1 1/3 ounce) package dry onion soup mix (like from Lipton)

2/3 cup pearl barley , dry

3/4 cup nonfat sour cream (light sour cream can also be used)

2 cups low sodium chicken broth

1/2 cup basmati rice (long grain rice can also be used)
