1 medium/large fennel bulb with some fronds (approx. 2 cups sliced)

1 granny smith apple

2 tablespoons lemon juice, divided

1 tablespoons flat leaf parsley, minced

1/2 teaspoon lemon zest

2 teaspoons olive oil

1/4 teaspoon kosher salt

1/4 teaspoon freshly ground pepper

2 teaspoons honey

1/3 cup caramelized or candied pecans, chopped
