6 campari or plum tomatoes

generous handful of thyme sprigs

1 T Fustini's Leccino Olive Oil

2 T Fustini's 18 Year Old Balsamic

1 smallish red onion, very thinly sliced

1 T red wine vinegar

1 1/2 c Spanish Pardina lentils

3 T Fustini's Leccino Olive Oil

1 garlic clove, crushed

1/2 c parsley, finely chopped

3 T chives, finely chopped

1/4 c dill, finely chopped

4-6 oz feta or gorgonzola, crumbled

sea salt and pepper, to taste
