Quick Vietnamese-Style Chicken Salad

I added extra peanuts and a little more fish sauce. Needed a little more heat. May try to add some more the next time I make this.

Ingredients for 4 servings

6 oz. package coleslaw mix

Freshly ground black pepper

1/4 cup salted peanuts, coarsely chopped

1 Tbs. granulated sugar

3 Tbs. fish sauce

1/4 cup fresh cilantro leaves

1 cup fresh mint leaves, torn if large

1/4 cup rice vinegar

3 small shallots, coarsely chopped (1/2 cup)

1 jalapeno, chopped (seed first if you want less heat)

kosher salt

1 lb. boneless, skinless, thin-sliced (1/4 to 1/2 inch thick) chicken breast cutlets
