2 bay leaves

A dozen or so whole black peppercorns

2 small thyme sprigs

2 boneless chicken breasts

4 thighs or legs or combination of both

Freshly ground black pepper to taste

All-purpose flour for dusting (optional)

1 to 3 tablespoons canola or olive oil as needed, depending on cooking method
