Ingredients for 4 servings

½ tsp sugar

250.0ml vegetable stock , boiling

2 large garlic cloves , finely chopped

3 tbsp lime juice

300.0g small vine-ripened tomatoes , halved

125.0ml olive oil

400.0g can chickpeas , drained and rinsed

250.0g couscous

1-2 tbsp vegetable or olive oil

FOR THE DRESSING

250.0g pack halloumi cheese , thickly sliced and then halved lengthways

2 tbsp chopped fresh mint

300.0g courgettes , sliced on the slant
