Mayola (Sweet Potato Custard) Pie

For those wondering why I call this the Mayola Pie; it is named after my grandma who loved all things purple. Granny would have loved this!

Ingredients for 8 servings

1/2 cup butter

1 small sweet potato (I used purple for the fun of it but doesnt matter what color is used)

2/3 cups evaporated milk

1 tbsp sifted flour

1 cup brown sugar

3 eggs

1 tsp vanilla extract

1/2 cup sugar

1 pie shell (either homemade or ready made)

2 tbsps turbinado sugar

Preparation

1.

Pre- heat oven to 350.

Prepare pie crust (I like to make it pretty). Press turbinado sugar into bottom of crust.

Peel and boil sweet potato

4.

Mash sweet potato and butter together. Then mix well with hand mixer.

5.

Mix in sugars, flour and vanilla.

6.

Add eggs one at a time, blending well after each one.

7.

Add milk and beat well.

8.

Pour filling into pie shell

9.

Bake pie at 350 for 45 minutes
